When preparing any of your favorite espresso based coffees; tamping is usually required for a great coffee taste! Coffee is ground into the portafilter basket and is loosely piled up with ground coffee. The grounded coffee then needs to be "tamped". Tamping is the process that compresses the fine grounded coffee particles together, removes all the empty space, and creates a dry dense puck ready for extracting. See: knock boxes.
